For the last stop of a night out you all decide that it’s best to get something to eat. This night, however, has been nowhere near normal and this final stop requires something extraordinary to finish it off.

“I know a place” a friend says and begins leading you all along.

Down an almost foreign street in your own city someone opens a door for you and offers you entrance to a place you’ve never heard of. Curiously you accept the offer, following your friend inside. What greets you is a warmly, colorful and comfortable setting, with soft Spanish guitar playing in the background and warm Spanish spices lingering in the air.

“Are they still serving?” You ask your friend closely.

“Oh yes! Food and drinks” they say. “The drinks are spectacular” they add after a momentary pause.

Looking through the menu you search for something on the heavier side, which seems also light and relaxing. You order a cocktail called the Spanish Ginger as it only has four ingredients, all of which sound excellent.

You’re barely paying attention to the conversation around the table and when your drink arrives and you take a sip your mind is cast away to a world of flavorful wonderment.

  • 2oz Bomani Vanilla
  • 1.5oz Plantation O.F.T.D overproof rum
  • 0.5oz Licor 43
  • 1 Dash Bittermen’s Buckspice Ginger Bitters
  • Glass: Rocks glass
  • Garnish: Skewered, candied ginger
  • Method: Stir and strain

Why This Cocktail Works

The nose is a play of soft herbs, rich notes of molasses, and gentle citrus sitting in the background. In the mouth this drink is round and rich, with notes of molasses. Notes of burnt orange and baking spices also dominate. There is an ever lingering sweetness in the background of this cocktail, kept at bay by the high proof of this drink. At the end, before this sweetness becomes too much, notes of ginger come in and close out this cocktail, making the finish almost dry. The flavors in this drink evolve as this cocktail warms.
